Habitual gestures, but with them every time we celebrate again the moment when Jesus, during the Last Supper , he distributed to the disciples the bread and wine as his body and his blood offered for the salvation of all men. In the Gospel of Luke (22, 19-20)  we read: ” Then he took the bread , gave thanks, broke it and gave it to them saying, “This is my body which is given for you; Do this in  memory of me “ . And, after dinner, did the same with the cup: ”This cup is the new covenant in my blood, which is shed for you ‘” . In the moment of Consecration , therefore, the bread and wine actually become the body and blood of Christ , as the dogma of Transubstantiation.
A small wafer without yeast …
Today, for practical reasons, we usually receive only the bread , and the wine is drunk by the priest , representing all the faithful. That bread, then, the Body of Christ , we are given the form of a wafer. Before the consecration, the host is nothing more than a small wafer of bread unleavened , ie, water and bread prepared with wheat flour but  without yeast , the Jewish way. A wafer that is used
currently in the kitchen, in particular for sweets . It is a sheet of wafer, for example, the one that covers the nougat and gingerbread, as is the one that sits on top of the cakes, especially those aimed at parties of children , to customize with different lettering. The wafers can be purchased in supermarkets and specialized stores (industrial ones), or prepare at home.
What changes the ” meaning “ of the host is, as we said, his consecration. Once  consecrated , it is no longer bread. That particle thin, circular shape, the priest gives us is the true Body of Christ under the appearance of bread. But why, then, we receive it as a ostia and not with a piece of bread, as happened to the early Christians ? Again, mainly for convenience . The wafers are very small and, therefore, easier to store. It is not easy to trace the precise moment when the bread was replaced in the communion from the host. The most likely hypothesis is that it was a smooth transition , probably started when he began to spread the use of guard in the church consecrated bread, so it was not necessary to have quantity bulky to store.
After all, this is still happening today: after Mass, the consecrated hosts  are kept in the  Tabernacle. A thing we know with certainty, however, is that the bread used in the celebration of the Eucharisthas always had a flat shape, because it is prepared without the yeast that would swell during cooking. Just for the host is linked to one of the first episodes that have helped us to know and love Francis .

A simple recipe to prepare at home a sheet of wafer cake

There are hosts that do not cause problems for celiacs
If the host is made ​​with the flour of wheat  and therefore contains gluten, people suffering from  celiac disease , that this intolerance towards food, how can he take communion? You can do it if he is used for wafers made ​​from wheat starch type Cerestar. In these particles, in fact, the amount ofgluten is minimal, is not harmful for celiac disease (do however carefully hyper-sensitive: for them is a better comparison with a doctor) and is sufficient to allow the bread  without addition of other substances that – as prescribed by the Congregation for the Doctrine of the Faith – would make the host ” invalid matter for the Eucharist “ .
